Introduction
Preparing home-cooked meals is one of the best things you can do for your health, and using an Instant Pot makes it easy and convenient to incorporate cooking into any lifestyle. This electric, programmable pressure cooker has long been an indispensable tool in my kitchen, especially when it comes to healthy cooking.
Healthy cooking means different things to different people. For me, the most important part is starting out with wholesome ingredients, and this book takes the guesswork out of choosing the right groceries. Its recipes draw from a palette of mostly whole-food ingredients, including fresh, frozen, and canned vegetables and fruits; beans; whole grains and whole-grain flours; grass-fed dairy; lean proteins; healthy oils and fats; and moderate amounts of natural sweeteners. Once you get comfortable with your Instant Pot and its possibilities, it can be a real joy to venture beyond the classics and try out flavor combinations from around the world. After all, many international cuisines are packed with healthy recipes if you just know where to look. Beet Borscht (page 75) is a light yet comforting soup, and it’s absolutely loaded with vegetables. Italian Braised Green Beans and Tomatoes (page 219) takes advantage of a few fragrant spices and cooks in just minutes. Chicken and Mushroom Goulash (page 166) is the epitome of the one-pot meal, with protein and vegetables cooked together.
