Sure, there are days when I feel exhausted and dull from the grind of work and parenting, but it’s been my experience that my happy medium always comes back to harmony and joy. When I’m eating the best plant-based
foods, staying hydrated, and moving my body, the dull moments don’t last long.
A SUCCESSFUL VEGAN IS HEALTHY, VIBRANT, AND COLORFUL. At least that has been my experience, and the experience of many vegans around the world. Vegan living and eating should be fun, exciting, and always delicious. The food should nourish and fuel your body, but also your soul. You deserve to thrive and operate at your personal best every day.
When I went vegan, the stereotype was that plant-based food was boring and bland. But those days are over. Vegan food has never been more delicious, diverse, and accessible, with restaurants and grocery aisles devoted to plant-based cuisine. At the same time, though, vegan food has never been more processed. Ultraprocessed foods like faux meats and cheeses make it easier for millions of people to eat less meat, but our reliance on these foods can make it harder to really dive into the wonderful world of nutritious and delicious plants.
A good vegan diet does not mimic the Standard American Diet. This cookbook aims to teach you how to make incredible, tasty food with nature’s most nutritious ingredients: plants. And it is my goal to make the best of vegan eating attainable no matter how busy you are, where you live, or whether or not you are an avid home cook. The recipes are approachable, fun, and delicious; always delicious. And the best part is, vegan vibes are for you whether you’re a full-time vegan or not. Do I want you to be vegan? Of course I do. But I’ll let the recipes and this cookbook be your inspiration. My goal is to help you find joy in the kitchen, eat more plants, and catch a vegan vibe!
